Paleo recipes. Empty Paleo Meat balls

This one's off of Crossfit Football, Sean 'Slug' Dunne braught a batch to Mildenhall. They went down a treat.

Ingredients:

4 lbs grassfed ground beef
Chopped celery and onions
5 whole eggs
1 cup almond meal (Almond flour, Ground Almonds)
Dried oregano, sea salt, cracked black pepper, cayenne pepper

Directions:

Use you hands to form into large meatballs.
If you using a pan, place them in a pan with olive and cook till done.
Or place in pyrex dish at 350 degrees for 20 minutes
Or cover bottom of crock pot and cook till done.

For the sauce mix:

1 16 oz can of diced tomatoes
1 can of tomato paste
Large handful of fresh basil
Chopped garlic cloves
Pinch of sea salt
Cracked black pepper

Finish:

If cooking by pan then once the meatballs are cooked cover with sauce

Ingredients:

* 1-2 pound pork tenderloin
* 1 red pepper, finely chopped
* 1-2 garlic cloves, finely chopped
* 6 oz spinach
* 1/4 cup chopped nuts (any kind that sounds good)
* Pitted kalamata olives
* Olive oil or butter for sautéing
* Optional: 1/4 cup crumbled Feta cheese

Instructions:

Drizzle some olive oil or butter in a frying pan over medium heat. Add red peppers and garlic to the pan. After a few minutes add the spinach and cook until it wilts. Remove from heat.



Butterfly cut the pork tenderloin (cut vertically down the middle until almost through, but not quite through the pork).



Place saran-rap over the butterflied pork and pound it as flat as you can without breaking through the pork (use a meat tenderizing hammer for best results).



Once the pork is thin then add the ingredients from the pan on top of the pork, spreading it all over. Add the nuts, and optional feta cheese and olives.



Gently roll the pork into a tube/roll. If you are using a smaller pork loin, or were not able to pound it very thinly, you may just be folding the loin over rather than rolling it. In this case, securing the loin with toothpicks or kitchen twine will be necessary.

Drizzle the pork with olive oil and butter and bake at 375 degrees Fahrenheit for about 40-60 minutes (depending on the size of the pork roll).

When the pork is cooked to your liking, let it cool slightly and then slice.

15 lbs of goji berries ( from the mountains of mongolia )
2 cups of jungle juice

Carrot Cake

This is a moist and delicious carrot cake with a hint of orange. Very much
like a 'real cake'.

6 eggs, separated
1/2 cup honey (or less)
1 1/2 cups carrots, cooked and pureed
1 Tlbs grated orange rind
1 Tlbs frozen orange juice
3 cups almond flour

Preheat over to 325° F.
Beat the egg yolks and honey together. Mix in carrot puree, orange rind,
orange juice and almond flour. Beat the egg whites until stiff and fold in.
Spoon into a greased loose bottomed 9 inch springform pan. Bake for about
50 minutes or until a skewer inserted into the centre of the cake comes out
clean. Cool in the pan for 15 minutes, then turn out onto a wire rack to
cool completely.

Patti Vincent comment: It was plenty sweet to me. It's a VERY moist cake. I
think anything could be put in place of the carrots too. Pumpkin, zucchini
etc., since the vegetable is pureed first.

Honey was seen as a rare treat and hard to come by in the paleolithic era, so don't go nuts on it just use it as a rare treat.

Here's one I made earlier!! And it is banging.

Ingredients

Meat (i've done this with chicken, tuna, and sausages!)
Mixed peppers
Nuts (I've tried a variety Almonds and Cashews are good)
Carrots
Broccoli
Cauliflower
Mushrooms
Olive oil

What to do!
Chop it, chuck it in a wok and fry for as long as it takes.

Paleo Pie

Looking for something to do with all that Prather ground beef? Make shepherd's pie. Shepherd's pie is a savory casserole made with ground beef and vegetables such as carrots and peas covered with a thick layer of mashed potatoes. Sounds pretty harmless, but most recipes call for butter, cream and flour which can make this seemingly healthy dish not so healthy. I made my own version of the classic shepherd's pie sans flour and cream and loved it! While flipping through Paleolicious: A Paleo Inspired Cookbook today I found a similar recipe. In her cookbook, Erica Saint Clair shares how to make a paleo-friendly pie:

1 head cauliflower
1/4 c coconut milk
2 tbsp olive oil
1-2 pound ground beef
1 large carrot, diced
1 large celery stalk, diced
1/2 onion, diced
1 large tomato, diced
1/2 tsp black pepper


Cooking directions
Preheat oven to 350 degrees. In a large sauce pan heat the olive oil over medium heat. Saute the carrot, celery, onion and tomato for about 5 min, until they soften. Add ground beef and black pepper and cook for 10-15 min, stirring occasionally. Meanwhile steam the cauliflower until it is easily pierced by a fork, about 10 min. In a blender, mix cauliflower with coconut milk and puree. Oil a 6" square oven pan and spoon in beef and vegetable mix. Cover with mashed cauliflower and bake for 20 minutes. Serves 4.

This is crackin!!!!!!!!

Ing:

Chicken Breast
Mango
Pepperdew peppers
Black Pepper
Sweet Chilli Peppers (optional)

Directions:

Peel and stew the mango until soft and mushy. Mash the mango and add peppers and black pepper. Marinade chicken breasts in sauce for four hours in fridge. Cook according to size of chicken breast and serve with roasted veg (i like a combo of parsnip, butternut squash and carrots personally). The veg is roasted with olive oil, garlic and herbs- lurrrrvlllyyy!!!!! Very Happy
